I’m Dan Melotti, Il Villaggio’s cheese expert. It’s my job to select the best tasting, highest quality cheeses in Italy. I’m from Modena, where my roots go back many generations. Here, lush dairy farms provide the milk for creameries making Parmigiano Reggiano.
