Genuine Fontina Valle d’Aosta has been made for centuries in the steep-sided Aosta Valley of the Italian Alps. Only here, the famous Valdaostan cows graze on fresh, lush grass and wild flowers watered by pure glacial streams to produce super premium milk. The cheese is stored in cool mountain caves, turned and cared for everyday and aged 5-6 months before going to market.

Fontina is smooth and buttery when young with a pale straw color and a few small holes. As the cheese matures it becomes darker, drier and more savory.

Fontina is a great table cheese that goes well with fruit, ham, salami, bread or a glass of wine. It is also a great cooking cheese and thus there is Fonduta, an Italian specialty similar to the Swiss and French versions of Fondue, but Fonduta’s secret ingredient that makes it classically distinct is the addition of eggs, creating a rich dish, with great depth of flavor.
