Pecorino Romana-lesser known but also the “romano” cheese in US is not representative of true product

To me, unquestionably the crust.

Pecorino Romana.

Bufala Mozzarella with fresh Tomatoes and Balsamic.

Gorgonzola Dolce with Prosecco.

What’s the most unusual thing you’ve seen paired with Italian cheese?
Mostardos – just don’t see them very often.
