Parmesan Roasted Potatoes – now here’s a perfect holiday brunch item. It works as a side dish, too. Incredibly flavorful, it won’t take much effort to prepare enough to satisfy all your guests.

Making Parmigiano Roasted Potatoes is a method more than a recipe, so don’t worry about getting the amounts exact. It’s all about customizing to your palate.

First, gather some Russert or Yukon Gold’s potatoes and scrub vigorously. Cut into small cubes. Place in a large bowl along with a herb mixtures of garlic salt, oregano, thyme and a dash of rosemary. Top with about a half cup of grated Parmigiano Reggiano per pound of potatoes.

Lightly oil a roasting pan and preheat your oven to 400 degrees. In the bowl, mix the potato mixture with a dash of olive oil. Spread the mixture out in your pan and roast for about an hour. To make sure it gets nicely browned on all sides, remove the pan and turn the mixture four times while it’s baking.
