Mascarpone Mashed Potatoes with Roasted Garlic
 
Ingredients
  • 3 pounds Idaho potatoes, peeled and cut into large dice
  • salt
  • 1½ cups whole milk
  • 6 cloves roasted garlic cloves, pureed
  • ½ stick unsalted butter
  • 8 ounces Il Villaggio Mascarpone Cheese
  • Freshly ground black pepper

Instructions
  1. To make the roasted garlic: Preheat oven to 400 degrees F. Peel most of the paper off garlic bulbs. Trim the top off the heads of garlic and drizzle the exposed surface with 1-2 tsp of olive oil. Wrap the garlic in aluminum foil and roast for 55 minutes. Once cooled, squeeze the garlic cloves out of bulbs and discard shells. Put the garlic in a blender to puree. You can also just mash with a fork.
  2. To make the mashed potatoes: Put potatoes in a large pot and cover with cold water. Bring to a boil over medium-high heat and cook until potatoes are tender, ~20-25 minutes. Drain water.
  3. Using a potato masher or electric beater, begin blending potatoes. Add garlic puree, mascarpone, milk, salt and pepper and continue blending until smooth and creamy.
