Key Lime Cheesecake with Il Villaggio Mascarpone

Ingredients
- 1¾ cups finely ground graham cracker crumbs
- ½ cup sugar, divided
- 7 tablespoons melted butter
- ¾ cup room temperature Il Villaggio mascarpone cheese
- 3 oz package cream cheese, at room temperature
- 1 egg
- ½ cup key lime juice

Instructions
- Preheat oven to 350°F.
- In a small bowl, combine graham cracker crumbs and ¼ cup sugar.
- Stir in butter.
- Combine until all crumbs are coated.
- Put the mixture into the bottom and sides of a 9″ pan; bake for 8 minutes.
- In large bowl, beat cream cheese, mascarpone and remaining sugar with electric mixer.
- Beat in egg and add lime juice to bowl. Pour cheese mixture into pan.
- Bake at 350°F for 10 minutes. Reduce heat to 250°F. Bake for 1 hour or until center is firm yet barely set.
- Cool and refrigerate for 3+ hours.
