Cool off with this easy Mascarpone Key Lime Cheesecake recipe! Inspired by the classic key lime pie, this cheesecake features creamy Il Villaggio Mascarpone. A crunchy graham cracker crust is the perfect base and contrast to the key lime. The sweet tartness will have you feeling like you're on a tropical island.
Ingredients
1¾ cups finely ground graham cracker crumbs
½ cup sugar, divided
7 tablespoons melted butter
¾ cup room temperature Il Villaggio mascarpone cheese
3 oz package cream cheese, at room temperature
1 egg
½ cup key lime juice
Instructions
Preheat oven to 350°F.
In a small bowl, combine graham cracker crumbs and 1/4 cup sugar.
Stir in butter.
Combine until all crumbs are coated.
Put the mixture into the bottom and sides of a 9" pan; bake for 8 minutes.
In large bowl, beat cream cheese, mascarpone and remaining sugar with electric mixer.
Beat in egg and add lime juice to bowl. Pour cheese mixture into pan.
Bake at 350°F for 10 minutes. Reduce heat to 250°F. Bake for 1 hour or until center is firm yet barely set.
Cool and refrigerate for 3+ hours.
