Gorgonzola Stuffed Strawberries
No matter how full you are at the end of a meal, you’re certain to find room for these overstuffed strawberries. Succulent, fresh Strawberries and whipped cream? So yesterday! But strawberries filled with delectably salty, creamy Gorgonzola cheese… now we’re talking. Confectioners’ sugar, fresh thyme and zesty lemon make the filling heavenly and refreshing.

 
Ingredients
  • 3 oz. Gorgonzola cheese (1/3 cup)
  • ½ tsp. grated fresh lemon peel
  • 2 tbsp. confectioners’ sugar
  • 1 tsp. fresh thyme leaves
  • 12 large strawberries with stems attached, rinse and pat dry

Instructions
  1. Place the Gorgonzola cheese in a small bowl and add ½ tsp. lemon peel, sugar and thyme.
  2. Mix until smooth, using a spatula. Set aside.
  3. Slice a thin piece off the bottom of each berry so they lie flat. Cut the berries in half and remove a round chunk from the side facing up. Finely chop centers and pieces cut from the bottom. Fold half of the chopped strawberries into the cheese mix.
  4. Stir until combined.
  5. Stuff the strawberries with the Gorgonzola cheese mixture.
  6. Serve immediately.
  7. Make ahead: Prepare step 1, one day in advance.
