Cherry Mascarpone Ice Cream
Take your plain old ice cream up a notch with this Cherry Mascarpone Ice Cream recipe. Rich cherries have a fresh sweetness that contrasts just right with the mild tang of Il Villaggio Mascarpone cheese, creating a truly unique dessert.

 
Ingredients
  • 4 large egg yolks
  • ¾ cup sugar plus 2 tablespoons sugar
  • 2 cups whole milk
  • 1 cup mascarpone (7 ounces)
  • ½ teaspoon fresh lemon juice
  • Pinch of salt
  • 2 cups fresh cherries
  • 1 tablespoon sugar
  • Juice of ½ lemon

Instructions
  1. Place 2 cups cherries along with 1 tbsp of sugar and lemon juice into saucepan. Cook while stirring continuously for about 5 minutes until cherries become soft and sugar dissolves. Set aside.
  2. In a large bowl, use a handheld mixer to beat the egg yolks with ¾ cup of sugar at medium speed until fluffy, about 4 minutes. In a saucepan, combine milk with remaining 2 tbsp of sugar and bring to a simmer 2-3 minutes. Slowly beat the warm milk into the egg yolks at low speed. Once incorporated, move everything back into saucepan, and simmer for 5 minutes while continuously stirring.
  3. Once milk/egg mixture has cooled, whisk in mascarpone and salt.
  4. Pour mixture into ice cream maker, then add cherry mixture. Freeze according to manufacturer instructions.
  5. Freeze for at least 2 hours, then enjoy!
