Cherry Mascarpone Ice Cream
Take your plain old ice cream up a notch with this Cherry Mascarpone Ice Cream recipe. Rich cherries have a fresh sweetness that contrasts just right with the mild tang of Il Villaggio Mascarpone cheese, creating a truly unique dessert.
Ingredients
- 4 large egg yolks
- ¾ cup sugar plus 2 tablespoons sugar
- 2 cups whole milk
- 1 cup mascarpone (7 ounces)
- ½ teaspoon fresh lemon juice
- Pinch of salt
- 2 cups fresh cherries
- 1 tablespoon sugar
- Juice of ½ lemon

Instructions
- Place 2 cups cherries along with 1 tbsp of sugar and lemon juice into saucepan. Cook while stirring continuously for about 5 minutes until cherries become soft and sugar dissolves. Set aside.
- In a large bowl, use a handheld mixer to beat the egg yolks with ¾ cup of sugar at medium speed until fluffy, about 4 minutes. In a saucepan, combine milk with remaining 2 tbsp of sugar and bring to a simmer 2-3 minutes. Slowly beat the warm milk into the egg yolks at low speed. Once incorporated, move everything back into saucepan, and simmer for 5 minutes while continuously stirring.
- Once milk/egg mixture has cooled, whisk in mascarpone and salt.
- Pour mixture into ice cream maker, then add cherry mixture. Freeze according to manufacturer instructions.
- Freeze for at least 2 hours, then enjoy!
