Il Villaggio® Gorgonzola Piccante Cheese, White Bean, & Basil Spread
 
Ingredients
  • 1 can white kidney beans, drained, rinsed (15 oz.)
  • ⅓ cup fresh basil leaves
  • 3 Tbsp. white balsamic or champagne vinegar
  • 2 Tbsp. extra virgin olive oil
  • ¼ tsp. salt
  • ¼ tsp. ground black pepper
  • ⅓ cup sun-dried tomatoes, minced
  • ¼ cup Il Villaggio® Gorgonzola Piccante, cut into ¼” pieces (2 oz.)

Instructions
  1. Into a food processor bowl add beans, basil, vinegar, oil, salt, and pepper. Process until smooth. Scrape sides of bowl. Process again.
  2. Transfer bean mixture to a medium bowl. Stir in sun-dried tomatoes and cheese. Serve immediately or cover and refrigerate. If desired, serve with additional cheese on top. Serve with crackers. Makes 1 3⁄4 cup.
