Artisanal Herbed Olive Stuffing with Pecorino Romano

  • Ingredients
  • ½ loaf (3/4 lb.) herbed olive artisanal bread, cut into ½” cubes (8 cups)
  • ¼ cup almonds
  • 3 Tbsp. butter
  • 1 medium fresh fennel bulb, chopped (2 cups)
  • 1 large shallot, chopped (3/4 cup)
  • 1/3 cup pitted, chopped kalamata olive (about 12)
  • 1/3 cup roasted red peppers chopped
  • 1 ½ Tbsp. minced fresh thyme (or 1 tsp. dried)
  • ¼ tsp. ground black pepper
  • 5 oz. Il Villaggio Pecorino Romano cheese
  • 1 cup low-sodium chicken broth

Directions

1. Preheat oven to 350F. In a large skillet, melt 2 Tbsp. butter over medium heat. Add mushrooms and garlic and cook until mushrooms are cheap football jerseys tender and have released all their liquid. Set aside.

2. In a large saucepan, melt remaining 6 Tbsp. butter over medium heat. Add flour and cook, stirring constantly, 1 minute. Gradually whisk in milk and cook, stirring frequently, 10 minutes or until thickened. Remove from heat and stir in Pecorino Romano, lemon zest, and pepper. Spread ½ cup sauce into greased 10″ X 15″ baking dish. Stir ¾ cup sauce into mushrooms.

3. Add spinach and Taleggio cheese to mushrooms in reserved skillet; stir well to combine. Spoon ½ cup of mixture on each noodle, leave a 1 ½” margin on each end. Roll up noodles and place seam-side down in baking dish, creating 3 rows of 4 spirals. Top each with 1 Tbsp. sauce; cover and bake 30 minutes.

1. Preheat oven to 350F. On two baking sheets, arrange bread in a single layer. Bake until dry but not toasted, about ten minutes; let cool.

2. In a large skillet over medium-high heat, add 2 Tbsp. butter and pears. Sprinkle with sugar and cook, stirring frequently, until glazed and lightly browned, about 5-10 minutes. Turn into a large bowl.

3. Into the same skillet over medium heat, add remaining 6 Tbsp, butter, shallots, celery, and marjoram. Cover and cook, stirring occasionally, until tender, about 10 minutes. Add to pears; stir in broth and calvados. Add bread and toss well. Add 1 cup cheese, cranberries, sunflower seeds, salt and pepper; toss lightly just to combine.

4. Turn onto greased 13″x9″ baking dish; cover with foil and bake 45 minutes. Top with remaining ½ cup cheese and bake uncovered until melted, 2-3 minutes.
