History: Asiago cheese originates from the village of Asiago and was first made with sheep’s milk back in the 16th century. It is now made with whole cow’s milk from the low-lying pastures in northeast Italy. Named after its home on the Asiago plateau, this cheese is produced using a time-honored method that dates back more than a thousand years. Asiago received a Protected Designation of Origin (P.D.O.) status in 1979.
Cheese Description: Il Villaggio Asiago Fresco is aged only 1 month giving it the taste of fresh milk. Its pale interior is semi-soft and consists of irregular holes spread throughout.
Flavor Profile: Il Villaggio Asiago Fresco is sweet and creamy with mild flavor. It is an inspiring cheese that is fairly salty with a slight tang.
Usage Suggestion: Pair with grapes, figs or a light and fruity wine. Try it grated over pastas, potatoes, soups, rice and salads, or melted in quesadillas, omelettes, sandwiches and pizza. It goes well with a variety of beverages such as cranberry juice or sparkling grape juice.
