For #NationalMeatballDay, Spaghetti’s #1 sidekick (in our mind atleast) takes center stage. We love our meatballs with lots of cheese (obviously). However, there are many types of meatballs from classic to stuffed to swedish, meatballs can take on lots of flavor. We picked 3 of our favorites that we thought you would enjoy!
The Classic
Ingredients:
1lb ground beef
1/2 cup Italian breadcrumbs
1/2 cup Il Villaggio Parmigiano Reggiano, grated.
1/2 cup whole milk
1 egg
1 tsp salt
1/2 tsp black pepper
1 clove garlic, chopped
1/2 cup finely chopped onion, grated if possible.
Directions:
Whisk together the egg, milk, salt, pepper and parmigiano reggiano together. Then mix in beef and bread crumbs.Finally mix in the onion and garlic. Combine until all ingredients are incorporated. Try not to over mix the meat. Then pinch off the meat mixture to form 1.5 inch balls. Arrange the meatballs spaced slightly apart on a baking sheet. Bake at 400°F for 25 to 30 minutes. Combine with your favorite sauce , pour over spaghetti and more grated cheese!
Cheesy Baked Meatballs
Ingredients:
Classic meatballs
2 cups marinara sauce
2 oz Il Villaggio Mozzarella, sliced
2 oz Il Villaggio Fontina, sliced
Directions:
Cook classic meatballs according to the recipe above. Preheat oven to 400°F. Place meatballs in a baking dish. 8 or 9in should do. Cover meatballs with marinara and the cheeses. Bake 15-20mins until cheese has melted.
Stuffed Meatballs with Mozzarella
1lb ground beef
1/2 cup Italian breadcrumbs
1/2 cup Il Villaggio Parmigiano Reggiano, grated.
1/2 cup whole milk
1 egg
1 tsp salt
1/2 tsp black pepper
1 clove garlic, chopped
1/2 cup finely chopped onion, grated if possible.
4 oz Il Villaggio Mozzarella, cubed
Directions.
Cube the mozzarella cheese then place in a freezer bag and freeze for 1 hour.This will ensure the cheese melts at slower rate and doesn’t overcook with the meatballs. Preheat oven to 400°F. Whisk together the egg, milk, salt, pepper and parmigiano reggiano together. Then mix in beef and bread crumbs. Finally mix in the onion and garlic. Combine until all ingredients are incorporated. Try not to over mix the meat. Spoon off about 4 tablepoons and roll into balls. Make a little hole with your finger and place in a cube of mozzarella. Roll to cover the cheese. Place meatballs on a greased baking sheet. Bake at 400°F for 15-20 minutes.
