Caprese Salad with Il Villaggio® Mozzarella & Fresh Pesto
Every tomato & mozzarella salad needs a little flavor kick. Our homemade pesto is it!

 
Ingredients
  • 1 lb. Il Villaggio® Mozzarella cheese, sliced
  • 2 large tomatoes, sliced
  • ½ cup homemade pesto

Instructions
  1. Arrange cheese and tomatoes on a platter. Top with pesto. Serve.
  2. Basil is versatile with uses in sauces, stews, salad dressings and of course, pesto. A terrific way to savor the flavor of fresh basil all year long is to freeze it chopped and stored in olive oil. Start by removing the leaves and discarding the stems. Wash and dry the leaves well. In a food processor, combine 5 cups of fresh basil leaves with ¾ cup of olive oil. Process just until the leaves are well coated with oil. Freeze in small, individually labeled containers.
