Prosciutto Wrapped, Gorgonzola Stuffed Dates In A Honey-Balsamic Drizzle

Ingredients
20 whole pitted dates
15 slices prosciutto, sliced lengthwise
4 ounces Il Villaggio Gorgonzola Dolce
20 toothpicks
1/4 cup balsamic vinegar
2 tablespoons honey
¼ teaspoon kosher salt
1/4 teaspoon black pepper
Instructions
Preheat oven to 375°F.
Cut one side of the dates and stuff with Gorgonzola cheese.
Wrap each date in a strip of prosciutto and skewer with a toothpick.
Place on an oven-safe wire rack inside a baking sheet and bake for 15-20 minutes.
In a small saucepan, mix vinegar, honey, salt and pepper.
Bring to a simmer over medium heat and let bubble while whisking till the liquids reduce by 75 percent – about 10 minutes
Drizzle on serving platter and place prosciutto-wrapped dates on top. Server any extra honey-balsamic on the side.
